After our missed week last week due to our busy spring weekend, we’re back sharing our menu and favorite recipes. Salsa is one of the easiest and most versatile recipes we’ve ever made. It’s basically a combination of fruits and veggies chopped and combined with spices. Why do so many people shy away from making their own? You control the quality and taste so every batch is perfect. You do not need a food processor to make salsa but it sure makes it a lot faster.
Fresh Salsa
- 8 lbs tomatoes
- 8 jalapenos
- 1 bunch cilantro
- 1 red onion
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp season all
- 1 tsp lemon juice
- Finely chop tomatoes, red onion, jalapenos, and cilantro by hand or use a food processor
for faster processing.
- Add to a large food storage container

- Stir in salt, garlic powder, onion powder, season all and lemon juice.
Guacamole is another one of those super simple recipes that is easy to make and customize to your taste. The simplest recipe is smashing avocados and calling it guacamole but adding a few little twists will make it fantastic.
Guacamole
- 4 ripe avocados, halved and pitted
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp season all
- pinch of salt
- splash of lemon juice
- Scoop out the avocado insides into a food storage container

- Smash the avocados.
- Stir in remaining ingredients.
You can stir in a tablespoon or so of fresh salsa, or a touch of tomatoes for a little color.
