Grilling is a fantastic way to make a meal and because we live in Arizona, we can grill year round. We tend to grill commonly grilled foods and haven’t ventured into the land of new foods so these might seem common but they taste oh, so yummy!

Burgers
2 pounds ground chuck
1 medium onion, diced
1 tbsp garlic powder
1 tsp onion powder
1 tsp season all
1 tsp salt
1 tsp pepper

Optional Toppings
your favorite cheese, bacon, tomatoes, onions, lettuce, mayonnaise, mustard, ketchup, etc

Directions
Combine all ingredients. This is Drama King favorite part because he loves to squish the onions and spices into the ground beef. Divide the mixture into 5 balls. Because our boys typically don’t eat a full patty, I take one of the balls and divide into two. I end up with 4 good sized burgers and 2 smaller burgers. Press each ball into a round flat cake. Grill burgers to your favorite doneness. Tim grills them for about 4-5 minutes per side. When they are almost done, he puts on a slice of cheese to allow it to melt onto the burger.

DO NOT press down on the burger as this while dry it out. DO NOT turn the burger more than one time.

And of course, you’ll need your favorite hamburger buns. A lot of times we make our own buns from scratch, either plain or onion. We always server our burgers with fries, usually homemade double fried french fries. A fresh salad would make a wonderful side, as well.

While I was rolling out the pizza dough, two little helpers got underfoot so I let them help. They watched Elmo and Emeril make pizza on Elmo’s Magic Cookbook so they already knew the basics. Drama King helped roll out the first pizza and Little T helped roll out the second. I rolled out a third dough into a rectangle cookie sheet to make some cheese bread.

The boys each helped spread out the pizza sauce on “their” pizza. While Tim topped the cheese bread, I split the remaining mozzarella cheese into two bowls for the boys. They sprinkled cheese on “their” pizza while I divided pepperoni, Canadian bacon, and crushed pineapple. Once the cheese was sufficiently sprinkled, they ‘bammed’ on the toppings while I ensured none overlapped. By this time, they were about done with their helping so we washed up and off they went to play. Tim topped the pizzas with a touch more cheese and into the oven they went.

The pizzas are still in the oven and the cheese bread is out, cooled and divided into about a dozen pieces. About a quarter of those are already eaten as “test” samples by everyone in the house. So far the dough is the best we’ve made but we’ll wait for final thoughts after we eat the pizza.

We picked up a stand mixer before Easter and have been making breads ever since. We’ve made basic white, wheat and sourdough breads but haven’t found the perfect one, yet. We’ll have to keep trying.

We did find the perfect hamburger bun recipe. I doubt we’ll ever buy hamburger buns from a store again. We may try a few modifications to turn these buns into onion buns by adding a little onion powder to the dough and top them with dried onions.

Today, we made some cinnamon rolls. I’d probably add a tad bit more cinnamon next time but over all they turned out well.

Tonight, we’re making our own pizza with this dough recipe.
