{Bread Macine} Potato Bread

We finally broke down and decided to buy a bread machine so we could quickly make sandwich bread and stop buying it from the store. It’s way healthier to make our own but without a bread machine can be time consuming.

Our normal go to sandwich bread is wheat or potato so of course those after making a classic white sandwich loaf, we tried both a wheat recipe (included with the machine) and a potato recipe we found online. The wheat recipe didn’t make our repeat list but the potato one we’ve made at least a few times now.

{Bread Machine} Potato Bread

Ingredients

  • 3 cups bread flour (14 3/4 oz)
  • 1/2 cup instant potato flakes (1 oz)
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 2 tablespoons oil (1 oz)
  • 3/4 cup milk (6 oz)
  • 1/2 cup water (4 oz)
  • 2 teaspoons active dry yeast (approx 1/4 oz packet)

Instructions

  1. Add all ingredients as recommended by your bread machine manufacturer.
  2. Select settings and press start. For our machine, it’s basic – light crust – medium size loaf and takes 4 hours.

Quick notes

I prefer to weigh most of the ingredients for my own sanity. This recipe is not ideal for timer/delayed making since it has actual milk. However, I would think you could use powdered milk and water and if you try that, let me know how it turns out.

#AtoZChallenge – Zucchini

1232719 64361429 300x225Zucchini is a versatile vegetable that we eat regularly. It can be added to almost every part of the meal from appetizers to main dish to dessert.

Hands down our favorite way to eat zucchini is battered and fried. Of course, you need to dip it in buttermilk ranch dressing. It pairs well with french dips, pizza, steaks, and so many other meals.

Recipe: Batter

Ingredients

  • 1 egg
  • 2/3 cup water
  • 2 tsp salt
  • 1/4 cup oil
  • 2 tsp sugar
  • 3/4 cup flour
  • oil for frying

Instructions

  1. Mix ingredients together.
  2. Dip bite size meat or veggies into batter.
  3. Fry in 400* oil until golden brown.

Yellow squash produce 1 150x150Several years ago, we went to a local restaurant and placed our normal order for fried zucchini. The manager came out to apologize that they were out of zucchini and were not planning on keeping the item on the menu any longer. The manager could tell we were quite upset and offered to make a special appetizer of fried yellow squash – the vegetable of the day. We reluctantly accepted the offer. Boy were we thrilled when the fried yellow squash was just as tasty as fried zucchini.

Tomorrow we’ll share the batter recipe that has been handed down for generations in my family. With a few ingredients, you can have fried zucchini, fried squash, or even chicken nuggets.
