#AtoZChallenge – Wines

This month we’ve taken on a challenge – one that involves blogging through the alphabet. Our theme for the challenge is food. Today we’re discussing alcohol and it’s use in the cooking process. What is your favorite way to use wine?

Wines add tons of flavor to your food.  You can get some decent wines fairly cheap and you only use a little bit of them at a time. Trader Joes has some great wine specials.  You need three wines.

Red wine does great with any type of beef. It does wonders when you use it to deglaze or within the sauce the meat cooks in.  If you add some red wine vinegar to it you can make some great marinades for just about any cut of Beef.

White wine for cooking chicken and fish. It is a great light wine and you can make a wonderful lemon peppered chicken with it.

Merlot is the last wine you need.  This you can use with soups, stews, to sauté vegetables with or to add just a splash to your ground beef mixture to make hamburgers.

Now I also cook a lot with three other spirits.  Whiskey, Vodka, and Tequila.

Vodka is great to replace a little bit of water any type of sauce.  It doesn’t add any flavor but helps bring out the other herbs in the sauce.

Whiskey is great with beef or pork. It works wonders for deglazing plus it adds a spicy tang if you add just a shot worth to your dish.

Tequila.  This one really works well in marinades. For Pork and Beef marinades it helps soften the tissue and helps it absorb wonderful flavors.  You can also add a splash to vegetables while they are sautéing.
